Due to their size, the process of leaching of useful components (tannins, aromas, etc.) contained in oak occurs very slowly. This slow process has a positive effect on the development of the wine’s bouquet.
We add cubes in quantities of 0.5-3 g / l during aging, after the first 2-3 decantations, for at least 2 months.
Oak cubes are imported directly from one of the largest producers of oak flakes in France.
