The marble reacts with the acidity of the wort, releasing carbon dioxide, which promotes gentle and natural agitation of the liquid. This helps evenly distribute the yeast and nutrients, stabilizes acidity, and accelerates fermentation. Furthermore, a marble improves the flavor of the drink, reduces the risk of unwanted flavors, and serves as a visual indicator of wash readiness: when bubbling stops, fermentation is complete. Using a those chips makes the wash preparation process easier, safer, and more predictable.
