Oak cubes, unlike flakes, are produced specifically for aging spirits. Thanks to their size, the leaching process of useful components (tannins, aromas, etc.) contained in dub is very slow. This slow process positively affects the development of the wine bouquet.
We add cubes in the amount of 0.5–3 g/l during exposure, after the first 2–3 decantations, for at least 2 months.
Oak cubes are imported directly from one of the largest producers of oak pellets in France.
